‘24 Vin Blanc and Gruyère Sweet Potato Bites

Ingredients

  • 2 Large Sweet Potatoes
  • 2 Tbsp Olive Oil
  • Salt and Pepper to taste
  • 1 tsp Thyme
  • 1 C grated Gruyère Cheese
  • 1/2 C grated Romano Cheese
  • Sliced Prosciutto

Directions

  • Preheat Oven to 375°F
  • Cut prosciutto slices in half and bunch up each half slice on a baking sheet
  • Bake for 8 minutes until almost crisp.
  • Let prosciutto knots cool.
  • Wash and peel sweet potatoes.
  • Cut sweet potatoes into 3-4” chunks.
  • Boil sweet potatoes until just soft.
  • Grate Gruyère and Romano cheese while sweet potatoes boil.
  • Grease a baking sheet with olive oil.
  • Once Sweet potatoes are soft, drain and place on parchment lined baking pan.
  • Smash each chunk with a fork or the palm of your hand.
  • Drizzle smashed sweet potatoes with olive oil, sprinkle thyme, and season with salt and pepper
  • Top each chunk with grated Gruyère and Romano cheeses and top with a prosciutto knot.
  • Bake 375°F oven 8 minutes until cheese is melted.
  • Serve warm.
