‘24 Vin Blanc and Gruyère Sweet Potato Bites
Ingredients
- 2 Large Sweet Potatoes
- 2 Tbsp Olive Oil
- Salt and Pepper to taste
- 1 tsp Thyme
- 1 C grated Gruyère Cheese
- 1/2 C grated Romano Cheese
- Sliced Prosciutto
Directions
- Preheat Oven to 375°F
- Cut prosciutto slices in half and bunch up each half slice on a baking sheet
- Bake for 8 minutes until almost crisp.
- Let prosciutto knots cool.
- Wash and peel sweet potatoes.
- Cut sweet potatoes into 3-4” chunks.
- Boil sweet potatoes until just soft.
- Grate Gruyère and Romano cheese while sweet potatoes boil.
- Grease a baking sheet with olive oil.
- Once Sweet potatoes are soft, drain and place on parchment lined baking pan.
- Smash each chunk with a fork or the palm of your hand.
- Drizzle smashed sweet potatoes with olive oil, sprinkle thyme, and season with salt and pepper
- Top each chunk with grated Gruyère and Romano cheeses and top with a prosciutto knot.
- Bake 375°F oven 8 minutes until cheese is melted.
- Serve warm.
